Butter simmered slowly until the milk solids brown and settle, then strained clear. Use it for tempering, on hot rice, or mixed into idli podi.
Keep the jar sealed at room temperature for up to 3 months, away from direct sun. Always use a dry spoon; water is what spoils ghee.
