About this kitchen
This is a one-person home kitchen in Ames. Everything is made to order in small batches: batters are ground and fermented here, podis are roasted and ground here, and everything is packed the day you pick it up. Nothing sits on a shelf.
Because batches are small, the menu is short and items sell out. The yellow line at the top of every page shows the next pickup day and the order cutoff. Orders close at the cutoff so there is time to soak, grind, and ferment before pickup day.
The license
This kitchen sells under Iowa's cottage food rules, which cover shelf-stable foods made in a home kitchen. Refrigerated items like fermented batters need a Home Food Processing Establishment license and are not on the menu until that license is in hand.
Food safety practices
- Every product page lists the full ingredients and shows allergens as a red badge. The same information is on the label of every container.
- Refrigerated items go straight from the refrigerator to you at pickup. Bring a cooler bag if your drive home is more than about 30 minutes.
- Each product page says how to store it and how long it keeps. When in doubt, the shorter time wins.
- Equipment and surfaces are cleaned and sanitized between batches, and allergen-containing items are prepared separately from items without that allergen. This is still a single home kitchen. If you have a severe allergy, please read the allergen badges and ask before ordering.
